Chocolate-covered Strawberries is a simple, elegant and delicious dessert.
Ingredients: 1 pint Strawberries washed and dried with caps still attached
4 oz of quality dark semi-sweet or bitter chocolate chips or bar
5 or 6 skewers
Slowly melt the chocolate in a double boiler (a small stainless steel bowl inside a small pan half-filled with water works best). If too thick when melted, stir in a little dairy or almond milk. Dip the lower half of each strawberry in the bowl of melted chocolate and pierce them laterally with a skewer, leaving space on each end of the spike and between each fruit. Hang the loaded skewers over a deep cake pan until the chocolate has slightly hardened. Then place the strawberries in a covered container and refrigerate for a couple of hours. Serve cold.
